Behind the Bar: Meet Dezy Doo

The Journey Begins

Some people stumble into hospitality — Dezy danced his way into it.

“I needed a side hustle to keep me out of trouble while I was studying. I was always out anyway, so it just made sense to work in a bar or club. Plus, who doesn’t love skipping the line and never paying full price fora drink?”

Dezy’s journey began back in 2016 with a short-lived “rockstar” shift at Holy Grail, but the spark was instant. Fast forward a few years, and he’s now one of GCBG’s most versatile faces — slinging drinks, curating vibes, and bringing energy to Electric, Rossi, and the occasional Circus cameo.

“These days, I’d say I work for the company itself rather than anyone venue. I started with Electric and moved into the food realm because, well,I like free food. All up, it’s been about two and a half years.”

Signature Sips & Seasonal Swings

Ask Dezy for his favourite drink, and you’ll get an answer that depends on the mood — and the weather.

“Watermelon Margaritas for sunny days — they taste like a Starburst. But winter? That’s Charlie Chaplin season. Easy to drink, warm enough to keep me cosy. Though honestly, it’s Tequila LLB all day, every day.”

At Electric, he swears by the Big Boy Chalice Iced Tea — the one that gets the party moving. And if you’re in early,the Espresso Dream is his go-to recommendation.

Over at Rossi, Dezy’s pick is the Martinidi Passione — a perfect drink with a full-body flavour, just like the restaurant.

Theatre, Energy, and Choosing Life

For Dezy, bartending is more than shaking tins and pouring spirits — it’s performance art.

“I once worked at a venue where every drink had theatre. My favourite was ‘Choose Life’ — guests would add sugar to literal fire, symbolising letting go of what’s holding them back. It was about choosing life,finding peace. I loved that.”

That sense of ritual, of creating a moment,runs through everything he does. Whether behind the bar or on the dance floor, Dezy brings emotion and energy to every shift.

Beyond the Bar

“I love being outdoors — walking to work, catching up with people.Life’s meant to be shared.”

“Any venue with R&B or house energy, talking space and open flooring — I need room to move.”

Behind the Bottle

If stranded on a desert island, Dezy’s bar would only need three spirits: Tequila, Plantation Pineapple Rum, and Cachaça.

“Enough to keep it tropical.”

“If I haven’t written it down, I don’t remember it — out of sight,out of mind energy!”

The Final Pour

At the heart of it all, Dezy Doo is more than just a bartender — he’s a storyteller. Each drink, each laugh, and each night behind the bar is a reminder of why hospitality matters: connection,energy, and a little bit of magic.

“We take moments — but in order to choose life, we must move forward with it, in peace.”
